Pineapple is not one of the most common dessert ingredients, but it should not be overlooked. Pineapple is a sweet and tangy fruit. The riper it is, the sweeter it gets. It’s a fruit that adds a very juicy, bright flavor to any dessert. This tropical fruit pairs well with a lot of other flavors. It’s also a pretty distinct flavor so it is really tasty on its own, too! These recipes will have you feeling major vacation vibes.
1. Pineapple Angel Food Cake
As the name implies, this cake is heavenly. You only need three ingredients to make this delightful low-calorie cake. Angel food cake is incredibly light and fluffy. Using boxed cake mix takes away most of the effort, but none of the flavor. Just mix in some canned crushed pineapple, and you have a scrumptious dessert. This is a light, creamy, fruity cake that you can enjoy without the guilt.
2. Pineapple Layer Cake
This cake is a stunner! If you love pineapple and cream cheese flavors, you need to get baking. Sponge cake is soaked in pineapple juice and then layered with pineapple curd. The pineapple curd is silky and tart. It’s absolutely sensational. Tangy cream cheese frosting is the perfect choice for this sweet cake. This cake is gorgeous and it tastes exquisite.
3. Do Nothing Cake
This tropical dessert is so easy to put together. It’s almost as easy as making boxed cake but it’s totally from scratch. You do virtually nothing. This cake does not have any butter or oils but thanks to the pineapple, it’s still super moist. Just toss all the ingredients into a mixing bowl and stir! Crushed pineapple, coconut, and your choice of nuts are the stars in this showstopper. However, the final product is like nothing you’ve ever had before.
4. Coconut Cake with Pineapple Filling
Coconut cake has always held a place in my heart and my stomach. There’s just something about the distinct coconut flavor that draws me in. The classic coconut cake is sweet with a unique texture from the shredded coconut. The tangy pineapple filling in this cake is a welcome addition. This cake is sweet, tangy, and not too rich. It’s tropical decadence all in one tasty treat. Layer cake is good at any event and this one is perfect for a summer party.
5. Duncan Hines Pineapple Upside-Down Cake
Pineapple upside-down cake is one of my favorite desserts. It’s retro, but I think the sugar-soaked cake and fruit on top are just divine. This one is made with Duncan Hines pineapple cake mix, so it can be whipped up in a jiffy. Layer the pan with pineapple rings, cherries, and a sprinkle of brown sugar before you pour in the batter. This cake requires little to no effort, but always looks and tastes great.
6. Pineapple Custard Pudding Cake
This cake has a delectable soufflé texture. Somehow this recipe naturally turns into a layered dessert. It’s magical! Egg whites are beaten until fluffy. Folding the whipped egg whites into the cake batter will give the cake special texture. The cake gets nice and fluffy at the top and leaves a yummy custard sauce at the bottom. Good thing these are made in individual ramekins because you won’t want to share!
7. Pineapple Sunshine Cake
This cake is just a simple, delicious, fruity pineapple cake. Crushed pineapple is mixed into the batter of this cake. It makes the cake super moist and gives it the perfect flavor that’s sweet and tart. Top this cake with a whipped frosting for a light and yummy treat that the whole family will love.
8. Granny Cake
Apparently, the name of this cake comes from the fact that it’s just like grandma used to make. Well, no offense to granny, but this cake might be better. It’s a simple white cake turned decadent dessert. Add sweet pineapple, crunchy walnuts, and caramelized brown sugar to the white cake base. Bonus: you only need to use one bowl for this dessert. I’m always up for any recipe that lets me save time on washing dishes. The result is an unbelievably moist cake with a sweet, nutty crunch and a buttery glaze.
9. Pineapple Coffee Cake
This moist cake has a sugary, crisp streusel top. Coffee cake gets a tropical upgrade with pineapple and walnuts. This popular breakfast sweet is full of actual chunks of pineapple. You get nice little bits of pineapple in each bit, which is both a sweet surprise and a terrific texture. The best part of any coffee cake is the streusel topping. This one is topped with lovely walnuts and crunchy sugar. It’s buttery and nutty perfection. Coffee cake, in my opinion, is the best excuse to eat cake for breakfast that I can think of.
10. Pineapple Dream Cake
This pineapple cake is, like the name states, simply dreamy. This recipe has an odd ingredient, but don’t be alarmed. There’s sour cream in this cake batter, and it gives the cake a delicious flavor. The sour cream cuts a little bit of the sweetness but the pineapple keeps the fruity flavor going strong. Add pudding mix to pineapple and whipped topping to make the frosting extra rich. This cake is so unique, it might fool everyone into thinking it came from a professional bakery.
11. Pineapple Cupcakes
Cupcakes are a beloved, handheld favorite. They’re great at parties or bake sales and loved by almost everyone. These cupcakes are full of sweet and tart pineapple flavor. Cupcakes are generally easy to make and take less time to bake than regular cakes. They’re great with any frosting but will taste incredible with the pineapple buttercream. Make these for a birthday party or just for yourself. These cupcakes will not disappoint. Click on a star to rate it!
